    PRINCIPAL PURPOSE OF JOB: Extension Assistant in Poultry Processing and Food Safety Position in the Kentucky State University (KSU) Land Grant Program (LGP) and The College of Agriculture, Community and the Sciences (ACS) will serve as the lead educator and daily operations manager with stakeholders for the KSU Poultry Processing Building at the KSU Harold R. Benson Research and Demonstration Farm and assist with the KSU Mobile Processing Unit.

    SCOPE OF RESPONSIBILITY: Under the supervision of the KSU Farm Manager, the Extension Assistant in Poultry Processing and Food Safety Position in the KSU-LGP will serve as the lead educator and daily operations manager with stakeholders for the KSU Poultry Processing Building and assist with the KSU Mobile Processing Unit located at the KSU Harold R. Benson Research and Demonstration Farm. This position will be responsible for training producers on the use of the facility for processing poultry, fish, and rabbits, and possibly other species. This position will maintain up to date records on the processing activities for USDA, FDA, and Kentucky Health Services and be certified in food handling and chemical application. The positon will also conduct workshops on raising and processing poultry and rabbits, provide information on how to build and maintain housing and feeding equipment for such animals.

    ESSENTIAL JOB FUNCTIONS: (ex: duties that are essential to performing the job with or without an accommodation)

    1. Maintain the daily operations of the KSU Poultry Processing Building at Harold R. Benson Research and Demonstration Farm and assist with the Mobile Processing Unit.

    2. Train producers on the use of the facilities for processing poultry, fish, and rabbits.

    3. Maintain up to date records on the processing activities for USDA, FDA, and Kentucky Health Services and certifications

    4. Conduct workshops on raising and processing poultry.

    5. Conduct workshops on how to build and maintain housing and feeding equipment for such animals.

    6. Be certified in food handling and chemical application

    7. Assist Kentucky State Area Ag agents in the process of loading and relocating equipment and any help they may call upon me for their field day events.

    8. Assist with the maintenance of facilities and equipment used in the program.

    9. Work with stakeholders on Extension related questions through answering emails, phone calls, and letters, as well as occasional site visits to grower’s sites.

    10. Assist with general care and maintenance of poultry at the Harold R. Benson Research and Demonstration Farm and assist with research projects when needed.

    11. Assist with general farm activities as needed by the Farm Manager.

    12. Other duties as assigned.

    The position will conduct other duties as required.

    QUALIFICATIONS: Required: B.Sc in Food Science, Animal Sciences, or similar area.

    Licensing and Certifications

    KNOWLEDGE, SKILLS, and ABILITIES:

    • Knowledge of food safety and processing regulations.

    • Be certified in food handling, processing techniques, and chemical application

    • Basic livestock care procedures.

    • Effective communication skills.

    • Must be able to lift 50 lbs.

    • Experience with animal processing preferred.

    • Ability to obtain food managers certification.

    • Effective oral and writing skills.

    • Computer literacy.

    • Ability to work cooperatively in a team effort is required.

    • Initiative, resourcefulness, punctuality, and ability to work independently are essential.

    PHYSICAL REQUIREMENTS:

    • Work involves some exposure to unusual elements, such as extreme temperatures, dust, water, smoke, and/or unpleasant odors.

    • This job involves travel. The position will have statewide responsibilities.
