Position Announcement

Provide vision, direction, and leadership for the management and enhancement of Dining Services. Responsible for the overall administration, supervision, coordination and direct management of DSU’s Dining Services department. Responsible for planning, implementing, coordinating, monitoring, and evaluating all dining service functions including policies, procedures, and systems. Responsible for providing a high-quality food service within the budget parameters to students, faculty, staff, and guests of the University.   • Oversee all Dining Services functions, including Catering, Trailblazer Café, The Market, Brooks’ Stop, Infusion, Stacks, Chick-Fil-A, Pizza Hut, Off The Grid, Concessions, Vending, and Consigned Vendors (e.g., Ace Sushi, Be Fruity). Delegate specific areas to subordinate staff to ensure quality operations and efficiency/efficacy.
  • Maximize customer satisfaction through maintaining strong working relationships with students, staff, faculty and guests while minimizing costs. Utilize customer-driven methods (e.g. surveys and focus groups) and innovative merchandising and marketing to ensure customer satisfaction and continuous improvement.
  • Collaborate with other supervisors to plan and monitor current developments and trends in the food service industry for recipe development and merchandising with consideration for customer satisfaction, staffing and cost. Research, procure and create new products and services to further enhance the current mix of items to meet the needs of the campus community.
  • Develop marketing, public relations, promotional activities and merchandising plans for all dining services operations and implement researched plans.
  • Lead the recruitment of full and part-time employees, as well as evaluate personnel to ensure quality customer service, product, and effectiveness/efficiencies.
  • Ensure all full-time personnel, including the Director of Dining Services, maintain required food handlers permits and training/certifications required by franchised restaurants.
  • Create and implement a business plan to set pricing of food products, control food costs and to efficiently staff food production, food sales and event catering services to operate a self-support food service model.
  • Manage the business operation of Dining Services including convenient and efficient point-of-sale systems, inventory control, payroll (cost effective scheduling of employees), cash handling and etc. to ensure internal control and financial objectives are met.
  • Maintain necessary records (production, fiscal, and personnel) and ensure recordkeeping is done in a timely fashion and in accordance with applicable regulations.
  • Plan, organize and implement long range and strategic plans for the department, and ensure desired outcomes are achieved.
  • Establish and maintain high-quality food standards for the safe preparation of all items prepared in production kitchens. Maintain current knowledge of food production strategies and public health standards. Ensure safe and sanitary working conditions to comply with industry standards as well as federal, state, and county food and health codes.
  • Perform other duties as assigned.


  • Bachelor’s Degree preferred.
  • Four years of dining services management experience, with progressive levels of responsibility, required.
  • Current certification in ServSafe or ability to successfully complete course within six months of hire required.
  • Good working knowledge of food service practices and procedures, as well as experience in cooking required. Executive chef experience preferred.
  • Highly motivated, self-starter and able to effectively manage competing priorities and tasks; management experience in institutional food services preferred.
  • Good knowledge of tools and equipment used in institutional cooking, such as Combi Oven, Blast Chiller, Steam Jacketed Kettle, mixer, proofer, oven, fryer, grill, etc.
  • Strong computer skills in Microsoft Office; experience with Dining Service software for catering, ordering, point-of-sale transactions, etc.; knowledge of the University Banner System preferred.
  • Excellent interpersonal and verbal communication skills; ability to communicate effectively and exercise critical human relations skills in establishing and maintaining effective working relationships with employees, students, and guests.
  • Knowledge of business operations and basic accounting.

Supplemental Information

POSITION DETAILS, COMPENSATION AND BENEFITS: Full-time (12-month) professional staff position. Annual salary of $70,000+ depending on qualifications & experience. Desired start date of November 2021.
