Job Summary:

University Housing Dining & Culinary Services is hiring for an Assistant Manager Advanced - Unit Chef.

Under the general direction of the Unit Manager, the Assistant Manager Advanced - Unit Chef oversees the daily culinary operations of the Liz's Market dining operations in Waters Hall, manages and develops staff, and provides exceptional customer service. This position is responsible for the leading and monitoring of the preparation, presentation and service of a wide variety of food in a multi-platform dining operation.

This position ensures that products are fresh, attractive, and of high quality; monitors and maintains an adequate level of products (food ordering); and confirms that food products are produced, held, and served following safe food handling practices.

The starting salary is $55,000 for a candidate who needs to learn the responsibilities of the position and is not yet performing the full scope of the position. Responsibilities: Oversees daily food service operations including staff management and/or customer issue resolution in environments such as dining, retail, and/or catering venues to ensure customer satisfaction and achieve food service goals. This individual identifies work unit needs and contributes to the development of unit processes and procedures.
  • 20% Develops, implements and oversees workflow components, and assigns and coordinates the day-to-day activities of food service staff
  • 25% Selects, develops, implements and schedules logistics and menus for daily and catering operations
  • 15% Leads and provides exceptional customer service, answers questions, and provides information regarding food preparation, catering, and associated activities
  • 10% Assists with unit budget monitoring, management of inventory levels, and staff training
  • 10% Monitors adherence to federal, state, campus, and local food safety regulations, policies, and procedures, identifies needs and makes recommendations for improvement to leadership
  • 20% Effectively oversee production and display cooking to meet the ever-changing demands and needs of the unit.
Tasks:
  • Demonstrates and role models exceptional customer service.
  • Perform duties in a high-volume, dynamic, student residential dining environment.
  • Provides feedback on, and implements, creative, and innovative menus.
  • Provides support and assists as needed in the implementation of plans and procedures in the event of an emergency.
  • Supervises and leads the work of student workers.

Education:

Preferred
H.S. Diploma

Qualifications:

Required
- 2 years of supervisory experience in a professional kitchen setting (sous chef, banquet chef, executive chef, culinary director, production chef or manager)

Preferred
- Culinary degree from an accredited college or university
- At least one year of food production experience in a higher education setting
- American Culinary Federation membership
- Allertrain certification

License/Certification:

Required
ServSafe Certification
Current ServSafe certification, or the ability to be certified within the first 6 months of appointment, is required.

It is anticipated this position requires work be performed in-person, onsite, at a designated campus work location.

Primary schedule for this position is 12:30 - 9:00pm, with alternating weekends off. Schedule will be determined upon hire.
