Job Summary

The Campus Dining Services (CDS) department at CU Boulder is now encouraging applications for an Executive Chef! The Executive Chef is responsible for the oversight and management of all back-of-house (BOH) operations for their assigned operation as member of CU's Executive Culinary Team. The Executive Chef will ensure culinary integrity under their scope, and will work with team members through one-on-one training, recipe and menu product development, production accuracy, product research and cooking demonstrations for assigned dining operation.

Campus Dining Services leads the industry with outstanding quality food and dining experiences. Campus venues include residential dining halls, catering and retail outlets with staff who strive to make each student's experience the best it can be. Serving about 3 million meals each year, Campus Dining Services is dedicated to expanding sustainability efforts and providing options to guests with dietary restrictions and allergens.

What Your Key Responsibilities Will Be

Production, Menus, and Recipes:
  • Work with Senior Executive Chef to craft menu/restaurant concepts, trainings, and staffing structures throughout CDS. May facilitate for the role of Senior Executive Chef in their absence.
  • Assist production manager with forecasting CBORD to ensure product orders, production needs and inventory controls are met.
  • Existing knowledge of CBORD FSS, recipe coding forms and Nutrislice
  • Provide educational assistance to the production staff with culinary training programs (cooking, service methods, and techniques) for all food production areas
  • Revise recipes to incorporate new products or procedures, and help establish ingredient initiatives.
  • Research new trends and standards in the food service industry through trade journals, food shows, food brokers and manufacturers and participation in professional conferences and trainings as required.
  • Consult with the production manager, operations manager and general manager or through self observation to support and assist wherever there may be a culinary difficulty, whether it be concerns with the quality of food or service, food cost issues or staffing levels.
  • Assist in the development, writing and implementation of the menus required for all restaurant concepts within CDS as well as the preparation and presentation of special events and caterings as required.

Food Safety & A9 Identified Management:
  • Ensure that all personnel are following FSS recipes for compliance as required to ensure food allergen guidelines are followed.
  • Ensure all ParTech and A9 labeling procedures are followed and takes corrective action when out of compliance, including creation of accurate labels, troubleshooting equipment and staff education.
  • In collaboration with CDS Admin Team, help establish and enforce food safety and sustainability initiatives, and evaluates all areas of responsibility to ensure compliance with all sanitation protocols.
  • Serve on the food safety response team and respond to all food safety emergencies as appropriate to the work assignment.
  • Pass the State Food Safety Management Level Certification and offers tutoring assistance to staff, as well as the in-house AllerTrain Certification Training.
  • Is responsible for and participates in any health inspection audits, including annual County Health Inspections.

Personnel, Administrative Support and Training:
  • Provide leadership and oversight to ensure customer service standards (FOH and BOH) are met across CDS.
  • Empower others to make decisions in areas within their span of control, and engages in measures to increase empowerment response rate and overall score.
  • Provide daily hands-on coaching and training to the culinary staff to ensure the quality of the food being produced meets all department standards.
  • Display and demonstrate excellent communication skills, and coaches others to develop their own kills.
  • Supervise and conduct performance coachings and reviews of assigned staff.
  • Responsible for Human Resources responsibilities including but not limited to: approving payroll, risk management, leave requests in Kronos, and staff resource referrals.
  • Responsible for placing maintenance work orders for fixtures and equipment.

Other Duties as Assigned:
  • Assists department in a variety of tasks as needed and based upon business need.

What We Require
  • Bachelor's degree and 2 years of job-related experience, or an equivalent combination of education and experience.
  • Ability to become State Food Safety Manager certified or an approved equivalent certification within 6 months of start date.

  • Proven track record of developing and empowering diverse teams.
  • Extensive knowledge of foods and food services administration in multi-faceted venue and large volume production operations.
  • Ability to interact and optimally connect with the staff, other department personnel, and campus partners.
  • Strong attention to detail and communication skills.

  • Previous Servsafe and A9 labeling experience.
