Position : Adjunct Lecturers

Department : Department of Nutrition and Public Health

Classification : Part-time, Non-benefit eligible

Brief overview of duties : Adjunct Lecturers for undergraduate and graduate classes in the Nutrition Program, Department of Nutrition and Public Health, College of Science and Health. Adjunct faculty teach on a per-course basis.



Courses currently available:

NUTR 2250 Foodservice Operations. This course presents the following foodservice principles and processes to deliver quality services: menu planning, purchasing, procurement, production, distribution and service, quality improvement, and layout and design. Prerequisite: Credit or co-registration in NUTR 2241 or 3244.

NUTR 3375 Nutritional Biochemistry and Metabolism. A study of the basic concepts of biochemistry applied to cellular metabolism of carbohydrates, lipids, amino acids, vitamins, and co-factors. Emphasis is placed on metabolic pathways, the interrelationships of major nutrients, and the relation of the metabolic processes to the overall nutritional health of an individual. Prerequisite: Grade of “C” or better in CHEM 1109; and Grade of “C” or be tter in NUTR 2241. 3 semester credit hour/s.

NUTR 5501 Dimensions of Wellness. Survey course explores the science of wellness using a seven-dimensional model, including components, related elements, and measurement. Students develop a wellness assessment and strategic action plan.

Discussion examines issues in each dimension. 3 semester credit hour/s. Currently delivered online asynchronous.

NUTR 5561 Maternal and Child Nutrition. Study of the physiological and metabolic changes that occur in pregnancy, and infancy through early childhood. Examine the nutrition and cultural factors impacting growth and development. Evaluate and critique nutrition programs and strategies for this population. 3 semester credit hour/s. Currently delivered online asynchronous.

Required Qualifications:
Master’s or Ph.D. (preferred) degree in Nutrition or closely related discipline with focus in Nutrition from an accredited non-profit institution. Clinical nutrition experience and RD credential required for medical nutrition courses. Evidence of effective teaching preferred. Applicants with experience in online education environment will be given preference for online courses. Applicants must reside locally and have legal authority to work in the USA.
