The purpose of this job is to assist and provide leadership and oversight of day to day operations within the dish room utility areas.
Examples of Duties
- Provides leadership, guidance, and support to coworkers to maintain efficient work flow
- Provides Executive Sous Chef with feedback on operations
- Ensures that proper practices/procedures are in place and followed
- Acts as Safety member for area.
- Works with EH&S to maintain proper SDS for area
- Assists in maintaining adequate inventory of dinnerware/silverware
- Set up and lead operation and maintenance of equipment (i.e. carousel, dish machine, conveyor, disposal, extractor units, ware washing station, etc.)
- Clear and sort waste materials from dishware
- Sort and load appropriate racks to be cleaned
- Maintain separate dirty/clean areas to avoid cross-contamination
- Transport clean dishware and silverware to appropriate service areas
- Return prep/cook ware to appropriate production areas
- Maintain time and temperature log of equipment and notify chef or supervisor of any problems
- Provide leadership and guidance to student employees in utility/dish room area
- Keep work area, front and back of house, clean and well-stocked
- Be well groomed and wear the proper issued uniform
- Assist with production and/or service as requested
- Assist with catering functions as needed
- Assists in training, as well as other departmental function requirements
- Other duties as requested

- Ability to operate and maintain equipment
- Knowledge of proper/safe time and temperature for food handling
- Ability to work well independently as well as within a team
Education: High school diploma or equivalent required
Experience: Experience dishwashing in an institutional setting preferred
