Job Summary:

This position is responsible for the overall culinary performance of the Memorial Union Building. The Associate Executive Chef will lead a team of Food Service Assistant Managers, Food Service Supervisors, Chefs and Cooks to meet the demands of this large scale food operation. Excellent leadership skills are required to promote the high level of teamwork, customer service, safety, efficiency, and quality product expected from this unit.


Provides direction for food service operations by planning and organizing daily operations, department finances, sourcing, quality control, staff, and menu development to ensure customer satisfaction.
  • 20% Assists in the development and implementation of unit focused strategic planning initiatives and programs to ensure appropriate use of resources and exceptional customer satisfaction
  • 20% Assists in the development of unit focused operating policies and procedures to ensure adherence to production, safe food quality, handling, and sanitation processes and procedures
  • 20% Directs the development of food menus, inventory purchases, and forecasting
  • 10% Monitors contracts and liaises with vendors regarding product purchases and contract compliance
  • 20% Exercises supervisory authority, including hiring, transferring, suspending, promoting, managing conduct and performance, discharging, assigning, rewarding, disciplining, and/or approving hours worked of at least 2.0 full-time equivalent (FTE) employees
  • 10% Monitors and maintains technology systems to support the needs of various working units

*3-5 years progressive experience in culinary or food and beverage management - Required
*Experience in medium to high volume food production - Required
*Catering experience - Preferred

Hold or obtain within three month of hire. Must maintain during employment

Drivers License - Valid and Meets UW Risk Management Standards

Full Time: 100%

It is anticipated this position requires work be performed in-person, onsite, at a designated campus work location. Kitchen operations run from early morning until late in the evening. Flexibility based on business needs especially for special events in the Fall is necessary. Academic year, Monday through Friday 7am to 4pm. Summer (Terrace season) Tuesday through Saturday - Is the expectation.

The Wisconsin Union operates two buildings on the UW-Madison campus. The Wisconsin Union is a financially self-supporting division of the University of Wisconsin-Madison. Financial support for the organization is provided by income earned by twenty-two food service units and a variety of nonfood units such as games, guest rooms, space rentals and campus vending. Substantial support is also provided by student fees. The total annual organizational budget is approximately $45 million dollars.

The Wisconsin Union is part of Student Affairs at the University of Wisconsin-Madison, led by the Vice chancellor for student affairs. Our staff is dedicated to serving students and to helping them succeed in and out of the classroom in areas including health and well-being, identity and inclusion, leadership and engagement, and student advocacy.
