Position Summary

The Catering manager schedules staff and runs events. From formal dinners, plated meals, and buffet style meals. They are an integral part of the team to ensure successful events.

Essential Duties and Responsibilities

Set up of event
  • Organizes each timely delivery, setting up all equipment and food items in advance.
  • Manage, produce, and oversee production of food for all catering events.
  • Serves customers, insuring proper, timely and professional service.
  • Clean up area at the end of event, store all food appropriately according to sanitation guidelines, clean and store all equipment.

Plans & coordinates catering functions:
  • Assists customers with the planning of food service events. (Includes menu selection, room set-up, type of service, color scheme, etc.)
  • Construct weekly Schedules for Catering Department. Enters information into scheduling system.
  • Coordinates catering food needs with food production manager and Chef.
  • Requisitions foods and supplies needed through the storekeeper.
  • Maintains and prepares all necessary records and reports
  • Recruit, hire, train and evaluate Civil Service, Student and Extra Help employees for Catering Department.

Human Resource Activities
  • Communicates unit policies and procedures.
  • Coordinates and directs training programs that are conducive to the development of employees and staff.
  • Hires direct reports and gives final approval for hourly staff hiring.
  • Reviews and analyzes reports and implements corrective action.
  • Evaluates capabilities of employees in determining work responsibilities.
  • Manages by providing positive, constructive feedback to employees in order to reward, coach, correct and motivate.
  • Counsels’ employees and supervisors concerning departmental objectives. Completes performance evaluations in accordance with University Policy.
  • Ensures compliance with all federal, state, and local regulations as well as NIU policies and procedures.

Planning/Organizing Unit Activities
  • Disseminates information to employees, administrators, vendors, and the community.
  • Maintains operations within the approved budgetary limits by analyzing data from accounting reports, purchasing receipts, timecard reports, etc. Controls cost while maintaining quality in all areas.
  • Establishes a safe work environment for employees by planning sound safety and proper maintenance programs and training.

Public Relations Activities
  • Promotes the unit and department to customers and the community.
  • Develops and maintains a good public relations program in relation to students, guests, and other University personnel.
  • Responds to customer complaints, vendors, and other operational situations by
  • exercising sound judgment and decision-making skill
Minimum Required Qualifications (Civil Service)

CREDENTIALS TO BE VERIFIED BY PLACEMENT OFFICER
  1. High school diploma or equivalent.
  2. Any one or combination totaling eight (8) years (96 months) from the categories below:
    1. Coursework or vocational training in hospitality administration/management, culinary science, food services management, or a closely related discipline, as measured by the following conversion table or its proportional equivalent:
      • 30 semester hours equals one (1) year (12 months)
      • Associate’s Degree (60 semester hours) equals eighteen months (18 months)
      • 90 semester hours equals two (2) years (24 months)
      • Bachelor’s Degree (120 semester hours) equals three (3) years (36 months)
    2. Progressively more responsible supervisory and managerial experience in commercial or institutional food service operations.

KNOWLEDGE, SKILLS AND ABILITIES (KSAs)
  1. Knowledge of the theories, principles, methods, and procedures of professional food service management.
  2. Skill in directing and managing the activities of a staff.
  3. Administrative ability.

Exam Details:
