Position Summary:

This entry position of Sous Chef Trainer Tournant is to help manage and execute the overall daily food production for DES and help develop and drive the culinary training program for DES to strengthen the overall kitchen skills of the team. This position requires a confident culinarian who has the ability to lead a diverse group of staff with various levels of experience.

Essential Job Functions and Responsibilities:
    Has the ability to prepare a wide variety of foods and supports the preparation of food for all of DES operations. Works with the Diner Chef on training team members to execute new recipes and roll outs. Manage and execute daily Diner prep under the direction of the Diner Chef, and support the catering prep team whenever needed. Delegate effectively to Diner prep team to ensure all prep is completed planning two days in advance. Has the ability to take the lead on Diner or catering events when required. Trains and guides all DES staff in the proper methods of food preparation, cooking, portion control, food safety and sanitation. Assists the Diner managers in evaluating and developing personalized staff training needs. Attends weekly manager meetings.
  • Daily review of temp logs for the Diner.
  • Daily food quality line checks in each station of the Diner.
  • Fills in on stations for call outs and vacations as needed. Provide feedback regarding performance development and coaching to the Diner managers. Supports Diner managers with new hire training, and ongoing training.


    Responsible for HACCP training and support Production Cooling Storage Rotation Sanitation Labeling and Dating
Maintains a sanitary work area in accordance with the Pierce County Health Department specifications and requirements. Immediately corrects and retrains team members on any observed discrepancies. Trains and supervises use, maintenance and cleaning of food production equipment and identifies any repairs or replacements that are needed. Works with Diner Managers and team members to arrange and execute deep cleaning assignments. “Lean Path Champion” Provides training for the Diner Managers and team members on the use of the Lean Path system. Prints weekly reports and reviews analytics with the Executive Chef, Diner Chef and purchasing to make recommendations to reduce food waste. Reviews and trains team members on recommendations. Supports the purchasing department by placing orders through the broad liners and receiving product when needed. Strives to deliver exceptional product and service. Complies with Dining & Event Services (DES) standards and philosophy Other duties as assigned by the Executive Chef and Diner Chef.

General oversight of food production and training of DES staff.

Qualifications:

Education
    Candidates should possess an associate's degree in culinary arts (ACF-accredited program preferred), and at least three years of full-time work experience as a chef encompassing all types of food preparation techniques preferably in a large, high volume commercial restaurant, hotel or institution. Bachelor's degree is highly desired. Equivalent combination of experience and education considered.


Experience
    Personal computer experience, and experience with a menu management system preferred. Higher Education work experience desirable. Supervisory experience; customer service and communication skills; proficiency in display cooking techniques, food preparation and presentation; significant experience planning and preparing meals, pre- and post-costing and ordering food for large groups; and cycle menu preparation experience. Must be able to foster teamwork; train, supervise and direct the work of staff and student staff members. Demonstrated ability to lead a diverse staff with the proper balance of approachability and authority and work both independently and as a contributing member of a peer management team. Effective organizational ability, excellent customer service skills, outstanding conflict resolution techniques, superior written and verbal communication skills, and ability to work independently with little, or no supervision. Must be flexible and able to perform multiple tasks and work in stressful situations. Must possess ability to teach others specifications, style and artistic presentations of all types of food. Must possess a valid Food Worker Card. Regular and predictable attendance. Ability to pass pre-placement background inquiry, physical exam (including drug testing), and strength test. Ability to respectfully work, communicate and provide leadership within a diverse campus community.


Mathematical skills
    Demonstrated skill in computing, reporting and working with numbers as applies to budgeting, purchasing, production and pricing; calculating work schedules and timecards. Ability to discuss and present department financial information including COGS, labor, operating and capital expenses.


Language Skills

Must be able to speak clearly, listen attentively, read, write, and understand English.

Physical Demands
    Standing, walking talking or hearing, and tasting or smelling is required for greater than 2/3 of work time. To perform the essential duties described, sitting and using hands to finger, handle or feel is necessary up to 2/3 of the time on the job. Climbing/balancing, stooping, kneeling, crouching and/or crawling, and reaching with hands and arms are necessary for up to 1/3 of the time. The employee must lift up to 25 pounds for up to 2/3 of the time of the job and up to 50 pounds for up to 1/3 of the time. Close vision (clear vision at 20 inches of less), distance vision (clear vision at 20 feet or more), color vision, peripheral vision, depth perception and the ability to adjust focus are required to insure areas are clean.


Work Environment
    Up to 1/3 of the time, the employee works in wet, humid (non-weather related) conditions; near moving mechanical parts, and is exposed to outdoor weather conditions, extreme cold (non-weather) and extreme heat (non-weather). Moderate noise levels, such as those found in business office settings also characterize the work environment.


Compensation and Benefits: The anticipated pay for this position is $21.00 per hour DOE. Decisions about starting salaries are made based on the extent and relatedness of the candidate's education and experience and on internal equity and market considerations.
