Job Description

The Associate Director Culinary Operations provides oversight and is ultimately responsible for the culinary direction for the Catering Department. The successful candidate will bring novel, on-trend national and international concepts to the University. The candidate will understand flavors and presentation and incorporate those skills into large and small events. The candidate will have a broad world view with an eye towards sustainability when creating menu concepts, utilizing locally sourced products when possible/available. The Associate Director Culinary Operations will provide education, guidance and counsel to all catering culinary staff to ensure successful implementation of the department’s culinary vision and will partner with the catering operations team and all culinary leaders across campus to ensure successful planning and execution of events.

Qualifications
  • Minimum of ten years of kitchen knowledge in food preparation, presentation, sourcing and purchasing.
  • Experience with commissary food production, high volume batch cooking, and working HACCP knowledge.
  • Experience with hub and spoke food production and distribution.
  • Experience in a high-caliber, high-touch catering environment.
  • Proven ability to train and lead a team. Proven ability to present well and executive high-caliber culinary events in high-impact situations.
  • Degree in food service or culinary certificate from accredited school preferred.
Job Specific Qualifications
  • Must have a comprehensive understanding and ability to teach all skills related to cooking, including (but not limited to) knife skills, cooking vegetables proteins and grains, sauces, flavor development, all manners of cooking methods and a broad understanding of global cuisine types, seasonal produce, and local food ways.
  • Ability to envision, plan, and produce comprehensive menus across campus through strategic production scheduling using cold room production, cook/chill, bakery and catering.
  • Align market trends related to college and university segment, align menus, cuisine types and recipe development to demographics of Syracuse University community.
  • Maintain healthy, sustainable, and nutritious standards across all food production units.
Responsibilities
  • Provide leadership and supervision to all facets of centralized services production (Catering, Bakery, Production Kitchen and Cook Chill) areas to ensure consistency and quality of standards.
  • Train food services culinarians in proper culinary techniques, cooking procedures, sanitation and safety. Work directly with staff to enhance preparation and presentation of food.
  • As required by business needs, the Associate Director of Culinary Operations will develop culinary concepts and recipes for all units across campus (Catering, Bakery, Production Kitchen and Cook Chill). that meet the needs of a diverse group of clients.
  • In collaboration with purchasing agents and vendors, ensures sourcing of appropriate ingredients while hitting budgetary targets.
  • In collaboration with Director of Catering, Residential Dining, Retail Operations and Athletics, works to align menus, culinary initiatives, and concept development with production across all campus culinary units.
