Course Information:
HRC 100 C Nutrition 3 UnitsTerm hours: 54 lecture. This course is a study of the interactions between food and living organisms. This course includes the role of carbohydrates, fats, protein, vitamins, water and minerals in regards to nutritional status. (CSU/UC Credit Limitation, AA GE, CSU GE/C-ID: NUTR 110)

Maintain current knowledge of instructional methods and new technologies pertinent to areas of assignments; lean and apply emerging technologies and advances as necessary to perform duties in an efficient, organized and timely manner.
Teach scheduled classes and preform related duties as assigned, including timely compliance with clerical and administration responsibilities; comply with district, college and division policies in the performance of duties.
Develop culturally relevant course content, culturally responsive pedagogical techniques, and effective practices for engaging students who are diverse and/or are students who are historical undeserved.
Maintain professional and ethical academic standards associated with the history and culture of the hotel, restaurant and culinary arts department.

Minimum Qualifications:
Bachelor’s degree or higher AND two years of professional experience directly related to the faculty member’s teaching assignment;

OR Associate degree AND six years of professional experience directly related to the faculty member’s teaching assignment;

OR Possess a valid California teaching credential authorizing service in a community college in the appropriate subject matter area

OR the equivalent. Equivalent qualifications may include related education, training, employment and professional experience that would be equal to the required degree(s) and experience in this field as determined by the District Equivalency Committee.

Desirable Qualifications:
Membership and active participation in relevant professional organizations which may include; American Hotel and Lodging Association, California Hotel and Lodging Association, National Restaurant Association, California Restaurant Association, American Culinary Federation, Council of Hotel and Restaurant Trainers and/or Academy of Nutrition and Dietetics’ Accreditation Council for Education in Nutrition and Dietetics (ACEND).

Coursework typically includes food and nutrition sciences, foodservice systems management, business, economics, computer science, sociology, biochemistry, physiology, microbiology and chemistry.

Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN) Certification.

Demonstrated success in helping students from historically underrepresented and/or marginalized groups, nontraditional students, speakers of other languages, and students with learning disabilities.
