Dining Services Job Description

Job Summary

In partnership with the Executive Director of Auxiliary Services in leading, managing and oversight of the dining program, special events, and summer programs. Oversee culinary standards, sustainable purchasing, recipe development, culinary training. Manage the manager of nutrition services and student accommodations. Uphold policy and procedures for the dining department. Direct the supervision of unit staff, budget and food production.

Take appropriate actions to support a diverse workforce and participate in the College's efforts to create a respectful, inclusive, and welcoming work environment.

Essential Functions

Staff Management: (50%)

Oversee all culinary operations which includes supervision of dining staff and ensuring all products and services meet or exceed department standards of quality. Directly manage the Manager of Nutrition Services. Provide back up for other area managers and participate on campus weekend coverage.

Responsible for meeting union contractual obligations and to ensure positive working relationships. Work with management team to develop training programs and department sanitation and safety standards. Hire, counsel and discipline staff as necessary.

Recipe Analysis and Menu Development (35%)

Consult, develop and coordinate the CBORD Food Service Suite database with Menu & Systems Specialist for all dining applications, menu management, net nutrition, and catering software. Oversee the menu process to ensure continually fresh, sustainable and innovative recipes. Test recipes and train staff to execute with new techniques and ingredients. Develop special menus for events and/or recognize holidays, religious events, campus events etc. Monitor to ensure that all applicable operations are using the computerized menu management system to maximize efficiencies.

Work with unit chefs and Manager of Nutrition Services in menu planning to ensure department nutrition standards are upheld. Explore ways to expand local and sustainable food items. Meet with students and customers regarding special dietary accommodations and develop strategies to support special diets. Identify areas for universal access with allergen mitigation. Meet with the student government's menu committee.

Financial & Budget (10%)

Responsible for meeting financial goals by reducing processed food purchasing. Work with management team to control food and labor expenses. Increase seasonal and local purchasing through streamlined house purchasing.

Other Functions

Other Functions: (5%)

Contribute to communication and social media efforts for the department to ensure excellent marketing and promotion of all dining activities. Meet with college administrators to plan events. Develop and maintain standards responsible for ensuring health and safety as directed by local and state health department regulations and college standards. Supervise and monitor proper use of the Onecard access system, ensuring accountability and controls.

Minimum Qualifications (knowledge, skills, education, experience, certifications, licenses)

Bachelor's degree in a related area. ServSafe Certification within 90 days of hire for Food Safety and Alcohol Service. Massachusetts Food Allergen Certification within 90 days of hire. Valid Driver's License. GREAT Kitchens gluten free training.

Preferred Qualifications

Certified Executive Chef, ACF affiliation

Skills

Knowledge of the laws, rules, policies and procedures governing the food service operations. Knowledge of the types and uses of department and university forms. Knowledge of Google Applications, CBORD Food Service Suite, Workday. Understanding of common food allergies and accommodations. Familiar with the Americans with Disabilities Act as it relates to food allergy accommodations. Current on dining trends as it relates to sustainability, health and wellness.

Additional Information
