Position Summary
The Pastry Chef is responsible for supervising all aspects of production in the Bakery department and reports to the Assistant Director of Culinary Operations.
Position is responsible for controlling food/labor costs, pastry and bread product quality and quantity and coordination of pastry and bread production for banquet and outlet functions.
The Pastry Chef is also responsible for maintaining productivity within budgeted guidelines, developing new dessert/pastry/bread products for outlets, catering, and maintaining quality/cost control.
The Pastry Chef supervises a staff of 4-8 classified staff, plus student and temporary employees.
This position will work closely with catering operations as well to develop and implement new and exciting desserts/breads/pastries for static and seasonal menus.

Work conditions and physical demands are typical of those found in the food service industry. These conditions may include slippery floors, extreme temperatures, heavy lifting and standing for long periods.

SPECIAL REQUIREMENTS:
  • This position must be able to work days, nights and/or weekends to fulfill special projects and events.
  • This position is required to obtain a food handler's permit and Servsafe certification.
  • This position will require a valid driver's license and the ability to obtain UO Drivers Certification.
    Minimum Requirements
  • Four years' experience baking in a hotel, university, restaurant or catering environment.
  • Two years of supervision or lead work experience.
    Professional Competencies
  • Demonstrated ability and creativity in all aspects of the baking/pastry arts
  • Demonstrated ability or commitment to working with students and staff from diverse backgrounds
  • Knowledgeable in the use of commercial kitchen production equipment
  • Great attention to detail, creativity and innovation
  • Organizational and leadership skills
    Preferred Qualifications
  • Two year degree from an accredited Baking/Pastry Arts program.
  • ACF Culinary certification or equivalent certification of Certified Executive Pastry Chef or higher preferred
  • Supervisory experience in high volume restaurant, or college/university settings, or with a unionized work force
  • HACCP Certification or significant experience working within a HACCP plan.
