This is a 10-month position for up to 30 hours per week. The Procurement Specialist oversees the inventorying and purchasing of food and supplies for the Falk Commercial Kitchen, the Experimental Food Lab Kitchen, the ACE Demo Kitchen, and the Wine Appreciation and Wine & Beer Appreciation classes. The procurement specialist is responsible for assisting the Culinary Specialists and Instructors/Faculty with the daily operation of the kitchens as well as applying the necessary systems and policies that support the educational material of the curriculum and the safe and efficient operation of the Falk Experimental Food Lab and Commercial kitchens and the ACE Demo Kitchen Lecture Classroom. This position is also responsible for the procurement card purchases of supplies, materials, and equipment in accordance with University purchasing guidelines. Qualifications
  • ServSafe Certificate
  • AOS in Food Management or equivalent 2-year degree or 3-5 years of experience preferably in food procurement
  • Valid NYS driver’s license required
  • Knowledge of methods and procedures involved in purchasing, receiving, storing and disbursing food supplies/products
  • Ability to multi-task and handle multiple priorities simultaneously
  • Ability to work independently or in a team environment, and maintain collaborative relationships with all members of the staff, culinary specialists and faculty team
Job Specific Qualifications

Responsibilities
  • Oversees inventorying and purchasing of food and kitchen supplies for the Commercial and Experimental Lab Kitchens and the ACE Demo kitchens and for the Wine Appreciation and Wine & Beer Appreciation classes (19+ sections ¿ approximately $61,000+ food per semester.
  • Oversees the receiving function including but is not limited to, receiving food supplies and packages and count to assure accuracy, deliver items to the proper locations, maintain the proper PAR levels, and place orders accordingly.
  • Performs weekly inventory of all fresh food products, dry goods, beverages, alcohol, sanitation supplies, and linens
  • Sits with Food Vendor Rep and orders the food requisition(s) for the week
  • Checks vendor packing slips and invoices for discrepancies compared to order price
  • Inspects all containers, covers, crates, cans, etc., to determine that they are in good condition upon delivery.
  • Labels and dates all perishable foods received.
  • Orders and/or purchases all supplemental product to fulfill class needs
  • Oversees receiving and rotation of product (organizing and counting product inventory in all coolers and freezers.)
  • Responsible for doing class pull list and issuing food supplies and products
  • Places sanitation product orders as necessary

  • Purchases all supplemental product for the class (glassware, paper products to serve food, etc.)
  • Ensures that all food handling, safety and sanitation standards and procedures as followed.
    • Orders all filters, dish detergent for equipment
    • Assists in monitoring waste
  • Maintain the storeroom, refrigerators and freezers in a clean, sanitary condition, clean them daily if necessary.
    • Ensures that equipment is properly maintained
    • Moves racks and sweeps and mops entire storeroom daily
    • Maintains all small ware and small appliances in good working order
    • Check daily temperature sheets on refrigerators and freezers.
  • Assists Culinary Specialists for any special events
    • Costs out recipes and food requests for special events.
    • Orders food and essential supplies for special events
