Opening Details

Dining Services has two openings for Second Cook Allergen Specialist, 40 hours per week, 12-month, year-round position is available. One schedule is days Tuesday through Saturday 6:00 am – 2:30 pm with Sunday and Monday off and the other is evenings Sunday through Thursday 12:30 - 8:00 p with Friday and Saturday off. These positions will work primarily out of Paresky but could be moved to another unit based on need. Schedules are subject to change based on departmental needs.

Responsibilities

Working under the daily supervision of the First Cook, the second cook allergen will be responsible for the lead role in preparation of dedicated meals and food preparation for our Clean Cuisine Allergen Station. The Second Cook will prepare safe, allergen free menu options. The allergen station is an allergy-free focused station and is a creative challenge to provide excellent quality allergen free food, including taste and appearance, during assigned meal periods or catered events. The second cook Allergen will maintain the allergen station and dedicated allergen room, ensuring it passes the allergen surface testing completed by the department nutritionist. In the First Cooks absence, this position will assist as needed with responsibility for the entire kitchen production and clean up. Follows pre-established FSS menus and recipes to ensure accuracy in food allergens, food quality, preparation, temperatures, tastes, appearance and garnishing, as well as overall sanitation of kitchen, equipment, and storage areas. Ensures allergen labels are accurate and accessible. Accurately records food actuals production information at end of each meal period utilizing CBORD/FSS system. Ensures prepared food is covered and stored properly per Massachusetts Food Code.


Qualifications
  • The Second Allergen Cook will need to be certified, or pass certification, in allergen awareness training and menu trio AllerTrain U, and will be required to train other staff in these areas.
  • ServSafe and DOT certified.
  • The successful applicant should be enthusiastic, energetic and possess strong customer service skills.
  • Knowledge and ability to work in a kitchen environment, including use of basic math skills
  • Ability to handle a flexible schedule, and stand for long periods of time
  • Lift heavy objects up to 40 pounds with assistance
  • The ability to relate to customers and staff in a professional manner is essential.
