Job Summary:

The Associate Executive Chef is part of our dynamic culinary team and focused on overseeing food production for retail operations, grab and go functions and special events. This position has responsibility for building and developing a team of full time professionals, part time staff, and student staff. The goals of the program are to produce safe and high quality food in a timely manner for distribution to front of house locations, as well as relevant menu and concept development for all units under this position’s purview. Excellent communication skills, and a willingness to work with a diverse and inclusive team are essential to success.

Work Schedule:
The work week will regularly be 45 hours with some weeks exceeding this based on business needs. You'll be the leader of the area, and you'll be expected to flex your schedule as needed to meet the needs of the operation. Core hours for the position would be 7am to 3pm M-F, with critical weekends to include Commencement, Labor Day and Badger Home Football Games, however food production occurs 7 days a week. This position would be based in Union South, but occasionally flex to our other buildings for coverage as needed.

Responsibilities:

Provides direction for food service operations by planning and organizing daily operations, department finances, sourcing, quality control, staff, and menu development to ensure customer satisfaction.
  • 20% Assists in the development and implementation of unit focused strategic planning initiatives and programs to ensure appropriate use of resources and exceptional customer satisfaction
  • 20% Assists in the development of unit focused operating policies and procedures to ensure adherence to production, safe food quality, handling, and sanitation processes and procedures
  • 20% Directs the development of food menus, inventory purchases, and forecasting
  • 10% Monitors contracts and liaises with vendors regarding product purchases and contract compliance
  • 20% Exercises supervisory authority, including hiring, transferring, suspending, promoting, managing conduct and performance, discharging, assigning, rewarding, disciplining, and/or approving hours worked of at least 2.0 full-time equivalent (FTE) employees
  • 10% Monitors and maintains technology systems to support the needs of various working units

Education:

Preferred
Bachelor's Degree
We are mostly interested in your learned experience, however Bachelor's or Culinary degee and/or other formal training will complement your base of knowledge.

Qualifications:

Minimum of 3-5 years progressive experience in overseeing a high-volume retail operation.

License/Certification:

Required
ServSafe Certification
Must be able to obtain within first three months of hire.

Additional Information:

The Wisconsin Union operates two buildings on the UW-Madison campus. The Wisconsin Union is a financially self-supporting division of the University of Wisconsin-Madison. Financial support for the organization is provided by income earned by twenty-two food service units and a variety of nonfood units such as games, guest rooms, space rentals and campus vending. Substantial support is also provided by student fees. The total annual organizational budget is approximately $45 million dollars.
