Job Summary
RISD Dining is actively seeking a General Manager for Portfolio Cafe and Jolly Roger to join its in-house dining and catering program. Be a part of the group that delivers exceptional hospitality by supporting local farms through seasonally-inspired menus, and utilizing the strengths of its staff to provide the absolute best in culinary artistry to the greater community.
The General Manager for Portfolio Cafe and Jolly Roger is responsible for creating an exceptional dining experience. This position directs all relevant phases of the Portfolio Cafe and Jolly Roger and provide oversight for all aspects of day-to-day operations. Identifies, recommends, implements, and ensures that policies and procedures associated with operations and staff management are used consistently within the overall department. Actively participates in visionary and strategic planning to assure that unit represents emerging trends and that the Portfolio and Jolly Roger are competitive in every aspect of the operation. Regularly seeks customer feedback to gauge success and challenges.
Essential Functions
- Ensure that the Portfolio and Jolly Roger abide by best
practices in all aspects of operations, including food preparation
and quality assurance; purchasing procedures; safety and sanitation
procedures; waste management, composting and recycling; facilities
and equipment planning and maintenance; and compliance with health
department regulations. Address any issues presented on Quality
Assurance audits.
- Act as a participatory member of the supervisory staff -
mentoring enlightened hospitality through example; serving
customers in a timely and courteously way; and representing RISD in
a professional and knowledgeable manner to a diverse clientele.
Works collaboratively with the Executive Chef to ensure the best
menus, product and services are being produced.
- Hire, train, develop, and evaluate the front-of-the-house
operations team of the Portfolio and Jolly Roger. Develop training
methods and to continually improve and refine operational
procedures and communication methods. Identify inefficiencies and
work with all labor sources to remedy using various tools and
techniques including meetings, checklists, performance audits and
goal setting. Set and align expectations and goals with those of
the college and motivate the team to achieve the same. Complete
performance evaluations and follow up on plans as needed.
Responsible for identifying and implementing professional
development for staff. Communicate evolving departmental
objectives. Create a positive working atmosphere that fosters
communication and inclusivity. Ensure consistency and accuracy of
records and documentation. Ensure that all dining staff participate
in orientation programs for the college and have required
certification. Ensure that routine in-service sessions are planned
and executed with hourly staff. Revise and review employee training
manual as needed. Ensures that schedules represent the proper
amount of coverage and are posted in a timely manner. Processes
timecards in an efficient and accurate manner.
- Create and implement customer service goals and standards.
Oversee customer service-related feedback programs for example:
secret shopper, text & tell, surveys, and customer focus
groups. Maintain excellent public relations with students, staff,
administrators, faculty, and external constituents by being
accessible and customer service oriented. Communicate and
coordinate effectively with other campus departments to provide
comprehensive services to clients. Work to Interact with staff and
students to cultivate shared ideas. Introduce and develop new
initiatives which are responsive to student and institutional
needs, ensuring that the overall Portfolio and Jolly Roger
offerings are competitive within industry.
- Responsible for effectively merchandising and promoting The
Portfolio and Jolly Roger offerings to appropriate audiences.
Develop marketing and merchandising standards to ensure that
offerings are displayed in an attractive and appetizing manner.
Ensure accurate information is distributed regarding the Portfolio
(Grubhub) offerings; coordinate Point of Sale information,
advertising displays, promotional displays, and menus site. Update
social media sites on a consistent basis with new information and
or promotions. Coordinate vendor support and events in alignment
with established procedure. Oversee and implement special events
and seasonal promotions. Regularly submit to NACUFS and other
industry publications highlighting innovation. Ensure that all
website information associated with Portfolio and Jolly Roger is
accurate, easy to use, and reflect a highly discerning visual
community
- Ensure that site revenues and expenditures are carefully
monitored and consistent with departmental budget targets.
Continually review staffing matrix to ensure that target labor
hours are met. Ensure that monthly inventory is taken and that the
Portfolio and Jolly Roger are adhering to all purchasing/receiving/
inventory management policies and procedures. Ensures that
convenience products and pricing are regularly evaluated. Oversee
cash handling to assure that proper training happens and procedures
are being followed. Randomly audits cashiers. Monitor and analyze
data associated with the Portfolio and Jolly Roger’s variable costs
to assure financial goals are being achieved. Present
recommendations for changes or modifications to program.
Required Knowledge/Skills/Experience
- Associates degree in Culinary Arts or Business or equivalent
combination of education and experience.
- Five years dining management and kitchen experience in a
fast-paced, high-volume environment with rigorous quality
standards, with at a minimum of two years supervising staff.
- Exposure to culinary trends and menu development.
- Rhode Island Sanitation/ServSafe certification & Barcode
Certified for responsible Alcohol Service is required or must be
attained within the orientation and review period.
- Knowledge and compliance of safety and HAACP standards.
- Strong attention to detail and ability to work effectively in a
fast-paced environment with rapidly changing priorities.
- Strong oral and written communication skills required,
including the ability to effectively communicate effectively with
diverse and multi-lingual populations.
- Strong ability to work independently and as a member of a
team.
- Ability to continue job related training and professional
development.
- Ability to read, write and follow written procedures.
- Proficiency in Microsoft Office software and other
computer-based systems.
Valued but not required skills and experience:
Valid driver’s license preferred.

Full-time, 35 hours per week. orking hours regularly include evenings and weekends.
All dining and catering staff is considered essential personnel to the school and are therefore required to attend work even when the school is closed.
