Job Summary

RISD Dining is actively seeking a Dining Operations Supervisor to join its in-house dining and catering program. Be a part of the group that delivers exceptional hospitality by supporting local farms through seasonally-inspired menus, and utilizing the strengths of its staff to provide the absolute best in culinary artistry to the greater community.

The Dining Operations Supervisor works primarily out of the Portfolio Cafe, and serves as an essential part of daily operations by providing direction, supervision, and leadership to the front-of-house and utility personnel, also serving as an essential part of the successful daily operations. This role works with the Unit Manager in the development of a variety of student and staff programming and events and assists in the production of well-prepared food items. The Supervisor maintains cleanliness and sanitation levels for the front-of-house areas including all preparation and serving areas, with strict attention to sanitation procedures. The successful candidate actively participates in a team setting, with keen attention to customer service, and to culinary and visual detail in support of dining’s mission.

Essential Functions

In support of Dining and Catering’s mission and values, the incumbent may be called upon to perform any one or a combination of the following functions listed below:

  • Responsible for pre-preparation work necessary to facilitate front-of-house and utility services in a timely manner for meal periods. Assess staffing to effectively coordinate timely service for meal periods. Responsible for hands-on production work and for efficiently coordinating the work of others, including obtaining stock, preparing specific items, assuring that all necessary items have been ordered and are on hand.

  • Evaluate the needs of, and assign work to daily front of house and utility staff to ensure timely preparation of items, anticipating production volume versus service requirements in an all you care to eat dining program. Routinely evaluate programming and event offerings with unit manager and others on the RISD dining team, evaluating quality, overall appearance/presentation, and customer response.

  • Ensure all health code procedures are followed including but not limited to: temperature management, personal hygiene and sanitation.

  • Regularly perform inventory of food items, ingredients and supplies to maintain front-of-house working par levels. Make new product recommendations based on customer feedback. Stay current on trends in the industry.

  • Actively participate in the training of new employees. Review front-of-house and utility policies and procedures with new hires. Reports any shortcomings in training to Unit Manager. Provide ongoing training and in-services in front of the house and utility areas. Conduct pre-meal meetings to ensure all members of staff are familiar with what is being served.



Required Knowledge/Skills/Experience

Associates degree in Culinary Arts or hospitality and a minimum of three years catering culinary supervisory experience in a fast-paced, high-volume environment with rigorous quality standards or an equivalent combination of education and experience. Ability to read, write and follow written procedures. Strong oral and written communication skills required, including the ability to effectively communicate effectively with diverse and multilingual populations. Strong ability to work independently and as a member of a team. Computer literacy in Word and Excel required. Rhode Island sanitation/ServSafe certification is required or must be obtained within the orientation and review period. A valid driver’s license and good driving record is necessary.

This is a full-time, 40 hour per week position. Specific schedule to be discussed with candidates.

Dining and Catering staff are considered essential personnel and are therefore required to work even when the school is closed.
