Senior Operations Manager, Mission Park Production Dining Services

The college is pleased to announce an opening for a Senior Operation Mission Park Production Manager. Reporting to the Executive Chef, the position will work closely with all units’ chefs in building menus and supplying the kitchens with products to bring fresh, healthy, and local options to student dining and college events.

Complexities of the role will entail overseeing the food production process in accordance with production plans, training and supervising the kitchen staff, ordering all products, while remaining within budget, as well as collaborating with students and staff to provide authentic cultural meals, while building relationships within the campus.

Responsibilities:

The Senior Operations Mission Park Production Manager will train workers in methods of performing duties and coordinate work to promote efficiency of operations, along with ensuring quality and consistency. They will also assist with staffing and production of large catering events and all campus student events.

  • Overseeing the daily operations of the Mission Park Production kitchen as well as Sunday through Thursday student board plan
  • Ensures all food items on the service line are accurately labeled for food allergens, generated from FSS utilizing et Nutrition and Bartender
  • Ensures the daily utilization of LeanPath Waste Reporting System for pre-consumer waste. Oversees recycling and pre-consumer waste reduction
  • Meets regularly with the Catering Chef and/or manager assigned to specific events to coordinate production and staffing needs for large catering and all campus student events.
  • Ensures that the unit’s FY forecasted budget is operating as budgeted in the areas of food, labor, and direct expense. Reviews PeopleSoft reports on a weekly basis, analyze monthly financial reports and expenditures with
  • Participates in menu planning of cycle menus, festive meals, and display cooking considering menu diversity, variety, and nutritional
  • Meets regularly with the Dining Services Nutritionist, attends weekly Leadership Meetings, and holds weekly unit staff Meets with Executive Chef, Unit Managers, 1st and 2nd Cooks regularly to build menus that assist with streamlining the production process.
  • Responsible for menu forecasting and ordering on a timely basis using the CBORD/FSS Accepting, evaluating, and storage of food to be prepped for weekly menus.

  • Ensures adherence to all software programs and procedures including Micros, Access TV, LeanPath, FSS, Bartender, and Net
  • Assists the coordination and use of the Mission Park Kitchen to host annual training program for staff over the summer and winter study in collaboration with the culinary and leadership

Qualifications:

We seek someone knowledgeable in menu planning for foodservice operation. You must be highly organized to manage and coordinate multiple tasks in a fast-moving environment; should demonstrate a commitment to the college’s diversity, equity, and inclusion goals; and should be proficient in computer programs such as FSS/CBORD, BarTender, Excel, and Word; and should have excellent attention to detail.

5 years of relevant experience required. A Bachelor’s degree is preferred, or equivalent combination of education and experience.
