General Summary/Purpose

TheResearch Kitchen Supervisorwill work with the Johns Hopkins Clinical Research Unit at ProHealth on specific research projects to conduct feeding interventions and nutritional analysis of foods to determine their health benefits. This position acts as a representative/liaison to investigators (including PI), physicians, investigators, study coordinators, nursing staff and administration involved in coordinating research meals. The Research Nutrition Supervisor works under the guidance of the Sr. Research Nutritionist/Nutrition Supervisor in directing work activities of subordinate staff engaged in the production of research meals and research meal data collection.

Specific Duties & Responsibilities

  • Oversees and participates in all foodservice production including cooking, facility inventory, special meal pack out requests, facility sanitation, etc. under the supervision of the Dietitian.
  • Serve as shift-leader by directly supervising up to 5 Nutrition Technicians/prep cooks and up to 2 data entry/food police assistants.
  • Delegating tasks to the Nutrition Technicians, foodservice workers, and temporary employees.
  • Procurement of supplies, ordering items online or researching items used. Receiving/checking of deliveries and stocking inventory. Shop stores for foods and other supplies, when needed. A credit card will be used to purchase supplies.
  • Assist with the development of specialized recipes and use of various test products. Attend meetings with the Supervisory Dietitian and research investigators on study details.
  • Plans and implements operating work flow of food and nutrition services for research protocols to ensure effective utilization of staff and equipment.
  • Involved in ProHealth Research Kitchen Policy and Procedure development.
  • Assist Sr. Research Nutritionist in the evaluation of goals, policies and procedures, standards of care and performance improvement.
  • Prepares reports and maintains records of food service utilization.
  • Prepares shift schedules for Research Nutrition Technicians for adequate coverage of research kitchen.
  • Assist Sr. Research Nutritionist/Supervisor with development of nutrition services budget.
  • Assist Sr. Research Nutritionist/Supervisor in interviewing, hiring, counseling and initiates disciplinary actions of Research Nutrition Technicians.
  • Conducts sanitation inspections on a regular scheduled basis to ensure compliance with departmental and Baltimore County Health Department regulations.
  • Extrapolates research raw meal data and creates graphs/flowcharts for presentations.
  • Orders supplies and equipment within effect use of resources and cost awareness.
  • Ensures food services equipment maintenance.
  • Establish and maintain regular, on-going in-service training programs for theResearch Nutrition Technicians, Nutritionists and Nursing Staff.
  • Maintain food service certifications for all Research Nutrition Technicians
  • Instructs and provides training to dietetic interns and other hospital staff on
  • Metabolic Kitchen and Food Services in Research, Census Tracking and Special Recipes.
Minimum Qualifications(Required)

Bachelor's degree in related discipline.

  • Two (2) years related experience.
  • Some supervisory experience strongly preferred.
Additional education may substitute for required experience and additional related experience may substitute for required education, to the extent permitted by theJHU Equivalency Formula:18 graduate degree credits may substitute for one year of experience. Additional related experience may substitute for the required education on the same basis. For jobs where equivalency is permitted, up to two years of non-related college course work may be applied towards the total minimum education/experience required for the respective job. *

Preferred Qualifications

  • At least one year of kitchen supervisory experience required but 3+ years preferred. Prefer experience in research kitchen.
Special Knowledge, Skills, and Abilities

  • Computer skills to include MS Word, Word Perfect, Excel, Internet and Intranet, .
  • Knowledge of research nutrition diets.
  • Knowledge of food preparation and sanitation procedures.
  • Knowledge of appropriate and safe use of cleaning solutions.
  • General office and communication equipment.
  • Ability to operate a variety of food service equipment.
  • Must have a valid driver’s license and transportation.
  • Serve Safe Sanitation Certification that is current within the past three years or willing to get Serve Safe certified within one month after hire.

This may include documentation of having two (2) MMR vaccines; two (2) Varicella vaccines; or antibody status to these diseases from laboratory testing. Blood tests for immunities to these diseases are ordinarily included in the pre-employment physical exam except for those employees who provide results of blood tests or immunization documentation from their own health care providers. Any vaccinations required for these diseases will be given at no cost in our Occupational Health office.
