UM Campus Dining invites applications for a Culinary Associate II to perform work under minimal to no supervision and provides guest service to members of the campus and to the community at large. The person in this position will prepare specific menu items and recipes to standards set by the unit manager and executive sous chef. The employee assigned to this position will assist with training, ordering, receiving and inventory duties as assigned. This position will act in a lead capacity for bulk preparation and the organization of the pre-prep area of the Food Zoo. The individual in this position may be assigned pre-prep work for special events as needed in all areas of UM Dining.

The person assigned to this role will uphold the exceptional food quality, quantity, and presentation standards for menu items at all times, using methods including batch cooking and just-in-time preparation methods. It is important that this position will continually strive to incorporate local, garden fresh ingredients into their menus and recipes. The individual assigned to this position will enforce all ServSafe food safety procedures relating to food handling, storage, time and temperature controls, and sanitation at all times, as well as holding student staff to these standards. They will also employ effective food cost practices including the use of leftovers, daily specials, and accurate production techniques.

The person in this position may be assigned to open culinary positions elsewhere in UM Dining according to the needs of the business at any time.

The individual assigned to this position acts in a lead capacity by training and overseeing the work of others within the assigned area to ensure the accurate and proper preparation, production, and presentation of hot and cold food items required for daily menus. The Culinary Associate II will typically supervise student employees in the kitchen. This position may at times be assigned to supervise student employees in the front of the house. They will also be responsible for holding all overseen workers to the same standards that the unit manager and executive sous chef require of employees.

Post-Training Requirements:

  • Expert ability to use standard recipes and a variety of cooking techniques to prepare multiple recipes simultaneously.
  • Expert ability to create, follow, and audit CBORD recipes.
  • Expert ability to use CBORD to create order guides, enter inventory and issue requisitions.
  • Expert ability to create specialized menus as needed for guests with allergies or specialized dietary requirements.
  • Expert knowledge in the use of sous vide and food smoking techniques.
  • Expert ability to create seasonal specials based on available food from the garden or Farm to College program suppliers.
  • Expert ability to envision and create a well-engineered seasonal menu for the Iron Griz which will maximize guest satisfaction and deliver excellent net return.
  • Ability to adhere to the restaurant standards at all times and at all business levels


Required Skills
  • Ability to use standard recipes and a variety of cooking techniques to prepare multiple recipes simultaneously.
  • Ability to follow CBORD recipes.
  • Ability to create specialized menus as needed for guests with allergies or specialized dietary requirements.
  • Knowledge and experience using numerous pieces of standard food service equipment.
  • Must be management ServSafe certified within one year.
  • Working knowledge of standard HACCP, federal and state sanitation requirements


Minimum Required Experience
  • High School Diploma and a minimum of two (2) years of related and transferrable cooking experience in a high-volume, progressive foodservice operation


Preferred Qualifications
  • Two-year degree in a culinary or four-year, hospitality or foodservice management program or a directly related field. This position requires a minimum of two years of related and transferrable cooking experience in a high-volume, progressive foodservice operation.

Work Schedule: Full-time, 1.0 FTE (40 Hours a week), Monday through Friday 8:00 am to 5:00 pm, hours may vary depending on needs of the department, 12 months/year.

Salary: $12.96/hrCurrent employee’s rate of pay for this position will be determined by the staff compensation plan and will minimally be this posted salary. For questions and details regarding the staff compensation plan, email the Compensation Department .

Probationary Period: Six months minimum
