Vacancy Number: S-00643 Position Title: Executive Chef & Assistant General Manager Classification Title: Department: Dining Services Employment Type: Full-Time Duties and Responsibilities:
Food Operations Manager responsibilities include supervising the food prep and cooking, maintaining a fully-stocked kitchen inventory and complying with safety and cleanliness standards. To be successful in this role, you should be able to manage the kitchen staff and guide them to deliver quality food on time.
Assist General Manager in scheduling of employees, open/closing procedures, interviewing and hiring.
Ensure that all equipment is kept clean and kept in excellent working condition through
personal inspection and by following the restaurant’s preventative maintenance programs.
Plan and price menu items. Establish portion sizes and prepare standard recipe cards for all new menu items.
Inventory control- may involve light to heavy lifting.
Supervises organization and sanitation of dining rooms, kitchens, storage areas and loading docks.
Assist in ensuring the proper opening and closing of all food service operations.
Ensure purchase orders are completed with approved vendors.
Ensure food costs and labor goals are met .
Serves as Executive Chef for AUM Dining and works closely with the GM to support the overall management of campus dining
Knowledge, Skills, and Abilities:
Experience in food service management. Experience in supervising food service personnel, production, sanitation & service in a large-scale food service operation.
Experience as a cook in fast paced environment.
Familiarity with kitchen sanitation and safety regulations
Employee will be required to work some weekends and holidays
Minimum Qualifications:
A minimum of a high school diploma or equivalent required and
at least 3 years culinary restaurant management experience or 5 years general restaurant management experience.
